Enjoy this yummy clear soup recipe, the broth provides a yummy warm feeling if you are feeling sick or just want a delicious side dish or quick meal in the mornings to help boost digestion.
A cozy little pot of golden goodness
Earthy mushrooms, sweet vegetables, and warming ginger come together in a soothing, savory broth. A little magic, a little spice, and six hours of slow-simmered love.

Ingredients
Carrots, sliced into delicate little coins
Celery stalks, chopped
White onion, thinly sliced
Garlic cloves, minced or gently crushed
Fresh ginger root, peeled and sliced
Baby button mushrooms, halved or left whole
Scallions, chopped (save a few for garnish)
Chicken broth
Beef broth
Tamari, for a rich and savory depth
Red pepper flakes, for a little fiery sparkle (optional)
Salt, to taste
Directions
1. Gather your veggies. Wash and chop your carrots, celery, onion, garlic, ginger.
2. Fill your crockpot. Add all your freshly chopped vegetables and aromatics into the slow cooker.
3. Pour in the goodness. Add your chicken broth and beef broth until your vegetables are comfortably submerged.
4. Season your potion. Drizzle in tamari, sprinkle in red pepper flakes if you want a little heat, and add a pinch of salt.
5. Let the magic happen. Cover your crockpot and cook on LOW for approximately 6 hours, allowing all the flavors to bloom into a beautiful, savory clear broth.
6. Taste and sprinkle. Give your soup a taste, adjust the salt or tamari as needed, and finish with a sprinkle of fresh scallions.
7. Chop your mushrooms and scallion. I like to sautee these for a minute or so to remove the water and add a little more flavor to the garnish.
8. Remove the veggies. Remove all of the veggies from the dish to leave yourself with a nice clear broth.
9. Grab a bowl. Grab a bowl and pour in your yummy broth. Add your sauteed mushrooms and scallions leaving you with a delish bowl of clear soup.
A Little Kitchen Tip
For an especially delicate, clear broth, avoid stirring too vigorously and skim any foam or excess particles from the surface.
Serve warm in your favorite cozy bowl and enjoy a nourishing, comforting soup that feels like a hug from the inside out.

Gluten-Free Note
For a gluten-free version, use certified gluten-free tamari. Tamari is typically gluten-free, but check the label. Soy sauce is not necessarily gluten-free unless specifically labeled as such.
